Ingredients

  • 250 g whole wheat flour
  • 150 g brown sugar (or honey)
  • 100 g melted butter
  • 50 ml vegetable oil (coconut oil recommended)
  • 1 large egg
  • 200 g Greek yogurt
  • 200 g fresh blueberries
  • 200 g cream cheese (room temperature)
  • 100 g powdered sugar
  • 50 ml milk

Instructions

  1. Preheat your oven to 220°C and prepare a muffin tin with paper liners.
  2. Dust three-quarters of the blueberries in a tablespoon of flour to prevent sinking.
  3. In a large bowl, mix flour, brown sugar, and salt. Add melted butter and combine until crumbly.
  4. In another bowl, whisk together the egg, sugar, Greek yogurt, vegetable oil, and vanilla extract.
  5. Combine wet and dry ingredients gently until just mixed.
  6. Fold in the floured blueberries carefully.
  7. In a small bowl, blend cream cheese with powdered sugar and cornstarch until smooth.
  8. Spoon about 1½ tablespoons of batter into each muffin cup; add cream cheese filling and top with more batter. Sprinkle remaining blueberries on top.
  9. Lower the oven temperature to 175°C and bake for 22–25 minutes until golden brown.
  10. Allow to cool in the pan for 5–10 minutes before transferring to a wire rack.
  11. Mix powdered sugar with milk to create glaze; drizzle over cooled muffins.
