Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon red food coloring
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar (for cheesecake layer)
  • 1 egg (for cheesecake layer)
  • 1/2 teaspoon vanilla extract (for cheesecake layer)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine melted butter, granulated sugar, eggs, vanilla extract, cocoa powder, red food coloring, all-purpose flour, and salt. Mix until smooth.
  3. Pour the brownie batter into the prepared pan, reserving a few tablespoons for swirling later.
  4. In another bowl, beat softened cream cheese with granulated sugar, egg, and vanilla extract until smooth.
  5. Spread the cheesecake mixture over the brownie batter. Drop spoonfuls of reserved red batter on top and swirl gently with a toothpick.
  6. Bake for 28–32 minutes until edges are set; center should be slightly jiggly.
  7. Allow to cool completely before refrigerating for at least one hour prior to slicing into squares.
